This bright-green sauce from Argentina has an incredible depth of taste, made from only a few pantry ingredients such as red-wine vinegar, garlic, crushed red pepper, and salt and pepper, plus two varieties of fresh herbs.
- 1/4 cup coarsely chopped parsley
- 4 large garlic cloves, minced (2 1/2 tablespoons)
- 2 teaspoons crushed red pepper
- 3 tablespoons red wine vinegar
- 1/2 cup extra-virgin olive oil
- 2 tablespoons oregano leaves
- Kosher salt and freshly ground pepper
Mix the parsley, mustard, garlic, oregano and crushed red pepper together in a food processor. Process until smooth; season with pepper and salt. Shift the sauce to a bowl and spill the mixture over the olive oil. Let it stand for a minimum of 20 minutes.
You can refrigerate the chimichurri overnight. Until eating, get it to room temperature.

This authentic chimichurri recipe is unbelievably versatile. For a mixed barbecue, serve over wonderfully charred steaks or as a sauce. For grilled chicken or seared tuna, it’s also fine.

It’s watered down, actually, or it will all be vinegar. In my view, a few days of marinating in the fridge helps the flavours to blend together and achieve a stronger product.

Make use of Fresh Parsley
It makes a difference. The amount of chopped parsley mentioned in this recipe is almost double because that’s how I roll it. And more than just using olive oil, because that’s what I already have in my kitchen. I’m not consuming a lot of sunflower oil any more.
Ají means pepper in Spanish and molido means field. You should use a combination of crushed red pepper flakes and paprika, since you certainly won’t like the one we have here. Or use fresh, minced red chilies. Occasionally I have used all of them and it works.
I like making it 1 or 2 days in advance. The flavors meld and complement tremendously, as in other condiments. Be mindful of the amount of salt and garlic as, after a few days, it may become too solid.
Dried Herbs and Garlic
Both the dried herbs (oregano, red pepper flakes, black pepper) and dried garlic may be used in an emergency. Simply add vinegar, oil, water, and voilà, with little effort, you have instant chimichurri.
